buttermilk mango Jam Muffins

2 cups flour

1 tbsp Zesta baking powder

½ teaspoon salt

½ teaspoon grated nutmeg

2 tbsp sugar

1 large egg

1 cup buttermilk

½ cup melted butter

2 teaspoons vanilla extract

12 teaspoons Zesta mango jam


Step 1

Heat oil in a large skillet over medium-high heat. Sauté the onion and garlic in hot oil until the onion begins to soften, 5 to 7 minutes. Add the bell pepper and jalapeños; cook and stir for 7 to 10 minutes.

Step 2

Once sautéed, add the can of Kenylon Beans in Tomato Sauce, and add salt and black pepper to taste.

Step 3

Let it boil for 2 minutes and add chopped coriander to garnish.

Serve hot!
