BUTTERY TOFU & VEGETABLES IN SPICED PLUM SAUCE

Ingredients

  • 400g firm tofu (cubed)
  • 2 tbsp butter (or mix butter + oil so it doesn’t burn)
  • 2 cups mixed vegetables (e.g. bell peppers, broccoli, carrots, baby corn, snap peas)
  • 1 cup Zesta Spiced Plum Sauce
  • 2 tbsp Zesta Soy Sauce (optional, for extra depth)
  • ½ cup water or vegetable stock (if you want more gravy)
  • 1 tsp sesame oil (optional, for finish)
  • Salt & black pepper, to taste
  • Sesame seeds & spring onion, for garnish

Directions

Step 1 - Prepare tofu

  • Pat tofu dry and cut into cubes.
  • Optional: lightly dust with cornstarch for a crispy outside.

Step 2 - Cook tofu

  • Heat 1 tbsp butter + a splash of oil in a pan.
  • Fry tofu until golden on all sides (5–6 mins). Remove and set aside.

Step 3 - Cook vegetables

  • In the same pan, add the remaining butter.
  • Toss in vegetables and stir-fry 3–4 minutes (keep them slightly crisp).

Step 4 - Make the sauce

  • Add Zesta Spiced Plum Sauce and soy sauce to the pan.
  • If you want more gravy, stir in stock/water. Simmer 2 minutes.

Step 5 - Combine

  • Return tofu to the pan, toss gently in the sauce, and cook for another 2 minutes.
  • Finish with a drizzle of sesame oil if using.

Step 6 - Serve

  • Garnish with sesame seeds and spring onion.
  • Great with steamed rice or noodles.
