MANGO CHILLI GLAZED FISH

Ingredients
4 fish fillets (tilapia, snapper, cod, or any firm white fish)
2 tbsp oil (or butter)
Salt & black pepper, to taste
1 cup
Zesta Mango Chilli Sauce
1 tbsp lemon or lime juice (optional, for freshness)
Fresh coriander or spring onion, chopped (for garnish)
Directions
Step 1 - Prep fish
Pat fish dry with paper towels. Season lightly with salt & pepper.
Step 2 - Cook fish
Heat oil in a non-stick pan over medium-high heat.
Cook fillets 3–4 minutes per side (depending on thickness) until golden and just cooked through. Remove and keep warm.
Step 3 - Make glaze
In the same pan, pour in the
Zesta Mango Chilli Sauce
.
Add lime or lemon juice if you like extra tang.
Simmer 1–2 minutes until slightly sticky.
Step 4 - Combine
Return fish to the pan and spoon sauce over it, letting it coat well (about 1 minute).
Step 5 - Serve
Garnish with coriander or spring onion.
Best with steamed rice, coconut rice, or roasted veggies.
